I do too.
I think the remastered mono is popular because that was the "original" way they were recorded. THe purists like them.

Can anyone who has purchased the Stereo set attest to how the stereo mixes sound? I would have to think the quality of the listening experience to be improved. Doubt the 'purists' would agree with me on that one....

The print run for the mono set has been set and is already announced, whereas the stereo print run will be reproduced as needed.
So the collectibility factor comes into play for the mono.

the stereo remaster sounds amazing. I am a colossal fan however and I think that it adds to how I hear it. It does sound crystal clear and you hear a lot more subtle sounds that were a lot softer before. I have only fully listen to The Beatles and Abbey Road but I can hear a significant difference

Mostly audiophiles will want mono.
Stereo = guitars, bass & drums on 2 channels (left & right).
Mono = John on 1 channel, Paul on 1 channel, George on 1 channel, Ringo on 1 channel; then sent to left or right when they were mixing.
Mono just gives you more control over where the audio goes as opposed to everything spread out over 2 channels. Everything is mixed in mono, then recorded in stereo.

All of which, I do have to say, sounds pretty awesome on some Beatles albums. I never noticed as much until I was in college and separated speakers on each side of my room.

Yeah I'd imagine if Lennon/McCartney had it to do over, the whole Northern Songs deal would have been much different. But I think the initial sale was (obviously) done to save/make them money, so they at least had some role in that downfall... and were paid handsomely for it at the time.
Edit: I don't disagree that Michael could have shown Paul a hell of a lot more respect by not bidding against him, though.

For what little it's worth, my comment deserves explanation.
Seldom do I buy full albums. I have a habit of downloading them, listening to them, then either deciding whether to keep them, or pitch them. If I decide that an album is really a good piece of work, I'll go out and buy it, but most things, like this Beatles set, gets deleted.
I consider it just researching the music I choose to invest in. 99% of albums don't deserve to be purchased.

Though you can play Beatles songs on Rock Band and enjoy the band’s epic catalog on remastered CDs, you still can’t legally buy the music of John, Paul, George and Ringo on the iTunes store or other digital shops — yet. In a move that may represent Apple Corps. softening its traditionally inflexible view of selling the Fab Four’s music digitally, the company and EMI Music will release a limited-edition USB drive featuring the entire Beatles in Stereo remastered set as 320 Kbps MP3s on December 8th. All 14 albums and 13 “mini-documentaries” will be included on the 16GB USB drive, which will be shaped like the iconic Apple logo with “The Beatles” written on it. Only 30,000 of these USBs will be produced; onsale information is available at the Beatles Website.
Explore the Beatles’ full catalog in our album guide.
In addition, EMI is going after a digital-music Website called BlueBeat.com for offering up the Beatles catalog as a digital download without permission. According to Variety, a copyright-infringement lawsuit was filed yesterday by EMI, which controls the digital rights of the Beatles music through an agreement with Apple Corps.
Look back at classic photos of the Beatles.
Not only is BlueBeat offering the Beatles catalog without permission, they’re also doing it at below market prices: Each track costs only 25 cents, so an 11-track album like Magical Mystery Tour can be purchased digitally for $2.75, well below the $9.99 or so that iTunes would charge. Additionally, the entire digital Beatles in Mono catalog box set is currently being sold at BlueBeat for $53.25.
As of press time, BlueBeat is still permitting the Beatles’ catalog to be streamed and downloaded despite the threat of the lawsuit, and its parent company, Media Rights Technologies, didn’t respond to inquires from Variety. According to the news section at the BlueBeat site, the Website has been streaming the Beatles catalog since September 16th, just one week after the remasters were released.
